About Illumina

We ultimately want to be a brick and mortar cafe & bakery.  Due to COVID-19 and unfortunately the state of our economy we are unable to pursue this at this time.  We currently wholesale to multiple locations around Pittsburgh and we provide orders for large events.  You may also see us at farmer's markets, wineries, local pop-up locations, and charitable events around Pittsburgh! 

 

We strive for wellness and personalization and do not use preservatives or added sweeteners. Attuned to allergy friendly needs, Illumina is committed to providing their customers with a great foodie experience.  

 

Our gluten free baked goods, include bread, bagels, muffins, cake balls, cupcakes, cookies, etc. Illumina will have small menus on a seasonal basis.

About the Owner

Owner Ariel Clatty, has always had an interest and passion for food, health, and the psychology behind why we eat what we eat. For over ten years, she has struggled with celiac disease. As a PhD in bioethics, and researcher, she had found a passion and interest in nutrition, diet, and how our body functions with food. 

 

We as human beings, are all DIFFERENT. So, we need a place for all of us that is healthy and fits you. We all have different lifestyles and we should not have to change or be confined by limited meal options and restrictions in order to feed our souls.  We want to inspire the light within you, a fresh start, here at Illumina.

All of our products (that we possibly can) are farm fresh and locally sourced.  We are very aware of our mother earth.  We try our best to use compostable biodegradable friendly materials.  We strive to fuel our bodies, and protect where our fuel comes from in a healthy way.

Dietary Lifestyles

Illumina café & bakery provides nutrition for the following lifestyles (subject to add new restrictive dietary needs):

 

  • Gluten free

    • May use rice, tapioca, potato, almond, oat flours.  Foods that do not contain the gluten protein.

  • Dairy free 

    • May use alternative options such as almond milk, rice milk, imitation cheeses and spreads, vegetable oils.

  • Vegan

    • Does not contain dairy or eggs, or any animal products.

  • Vegetarian

    • fruits, nuts, vegetables, legumes, grains, dairy and eggs (There are varying types of vegetarian diets. Illumina's menu will include lacto-ovo-vegetarians when listed which according to the Vegetarian Society this is the most commonly used in which eggs and dairy are eaten).

  • Heart healthy 

    • A daily meal plan that emphasizes vegetables, fruits and whole grains, and limits high-fat foods and high-sodium foods. 

  • Diabetic friendly 

    • healthy-eating plan that's naturally rich in nutrients, low in fat and calories, and carbohydrate controlled.

  • Low-carb

    • focuses on proteins, including meat, poultry, fish, eggs, and some non-starchy vegetables. Generally, excludes or limits most grains, legumes, fruits, breads, sweets, pastas and starchy vegetables, and sometimes nuts and seeds.

  • Keto Diet 

    • A very low-carb, high-fat diet.

  • Paleo Diet

    • Typically includes lean meats, fish, fruits, vegetables, nuts and seeds — foods that in the past could be obtained by hunting and gathering. These foods include dairy products, legumes and grains.

  • Low FodMap

    • Typically used for digestive disorders and digestive sensitivity issues.  Suggestions of eliminating fermentable Oligosaccharides, Disaccharides, Monosaccharides, Polyols (short chain carbs).

  • Weight Watchers

    • Based their science-backed SmartPoints System, WW Freestyle encourages you to eat more fruits, veggies, lean protein, and less sugar and unhealthy fats.
